Easy dinner ideas when you are hungry but lazy
There are times when you come home from a long, stressful day of work, and cooking a big meal from scratch is the last thing you want to worry about. To make it easier, here are some ideas that require less prep time and are still delicious.
Pizza This is one of my favorite go-to meals and requires very few ingredients. All you need is pre-made raw pizza dough from your local grocery store, a jar of pizza or tomato sauce, mozzarella cheese, a little bit of flour and any veggies or meats for toppings. Leave it in the oven for about 20 minutes at 450 degrees and done!
Rice with black beans, fish, & salad You can buy canned black beans and heat them up on the stove, while the rice is cooking as well. Rice and beans pair well with baked salmon or haddock which don’t require a long time to cook in the oven.
American chop suey This was a favorite that my mom always used to make growing up as kids. Brown one pound of ground beef in a fry pan with diced onion and pepper, and then combine with cooked penne or elbow macaroni, and 1 can of tomato sauce in a large pot. Add a little salt, pepper, and basil, let cook on medium for about 10 minutes and you have dinner that everyone will love. Sprinkle with parmesan cheese.
Quesadillas One of the easiest meals if you are in a hurry. Take 1 flour tortilla, put cheese, chicken or beef, sliced onions, peppers, and a spoonful of black beans on top, then place a second tortilla on top. Spray the tortilla with cooking spray, and place in oven, and in about 10 minutes dinner will be ready.
Chicken nachos with avocado Spread out a layer of tortilla chips on a baking sheet, top with assorted shredded cheese, black beans, minced black olives, green onion, and shredded rotisserie chicken. Repeat two or three more times, bake for 10-12 minutes and then top with diced avocado, sour cream and a spritz of lime.
